I have a sony CRT Broadcasting monitor and i tested with composit, BNC and Svideo. They all look the same. Sony CRT what im capturing and adobe premier comes much closer to quality then final cut could.

"Very old" suggests standard definition. Yet you're exporting in high definition. That will cause image degradation. Don't do that.

Blu-ray has bitrate limitations that computer files don't. (That's my guess on why the difference.) Anyway, a preset is nothing more than a starting point, not the final authority on what you can export.
